Here’s a somewhat quick meal that I make myself for dinner/lunch.
I used farfalle pasta and boiled them with a few drops of olive oil in the water.
Throw shrimp, veggies (green beans pictured here), a bit of olive oil in a skillet.
Cook on medium heat.
If you’re using fresh veggies, sauté them first before throwing in the shrimp.
Once the pasta is ready and drained, throw in your shrimp/veggie mix, add sauce of choice.
Here, I’m using Alfredo sauce (Caution: it’s fattening!).
I’ve done this meal before with Pesto sauce and it was really good.
Just let the whatever you’re packing for lunch cool off before placing it in the fridge.
